Catch ’em & Cook ’em: A couple favorite recipes for Thanksgiving
Josie’s Sweet
Potato Casserole
Ingredients:
3 C cooked and mashed sweet potatoes
1/2 C sugar
8 oz cream cheese softened
2 eggs
Dash of salt
1 C chopped pecans
1 C cornflakes
1/2 C brown sugar
How to:
1. Mix together the sweet potatoes, sugar, cream cheese, eggs and salt and mix well.
2. Put this mixture in a buttered casserole.
3. Mix the pecans, cornflakes and brown sugar and top the casserole.
4. Drizzle with 1/2 C of melted butter and bake at 350 degrees for 30 minutes.
Granny’s Green Beans
Ingredients:
3 slices bacon cut into small pieces
1 onion cut into small pieces
2 Lbs fresh green beans or 3 cans of whole green beans
3 cans of chicken stock
Salt and pepper to taste
How to:
1. Brown the bacon in a large pot.
2. Snap ends of beans and wash.
3. Add onion dice to bacon and saute’.
4. When onion and bacon are cooked, add beans and chicken broth and bring to a boil.
5. Reduce heat and simmer all day or until beans are done.
