Catch ‘em & Cook ‘em: Chicken Breast & Country Ham Supreme
Ingredients:
2 chicken breasts divided
4 slices of country ham
1 C heavy cream
1/3 C apple cider
1 Tbsp fresh lemon juice
Salt & pepper to taste
4 slices buttered toast
How to:
1.Saute chicken breast in 1 Tbsp butter over medium heat (6 8 minutes)
2. Add the ham slices and do not overcook.
3. Add cream and bring to a boil
4. Remove ham and chicken to platter.
5. Reduce the cream by half and add cider and simmer for 1 minute.
6. Whisk in 1 Tbsp butter and lemon juice
7. Season with salt and pepper
8. Top each slice of toast with ham and chicken and divide sauce over each
