Catch ‘em & Cook ‘em: Baked Salmon (with Caribbean Fruit Salsa)
Ingredients:
3 Lb salmon fillet
1 T Caribbean jerk seasoning
1 1/2 T olive oil
How to:
1. Place salmon fillet in a roasting pan and sprinkle evenly on 1 side with jerk seasoning.
2. Drizzle with oil, cover and chill for 2 hours.
3. Bake salmon at 350 degrees for 20 25 minutes or until fish flakes with a fork.
4. Serve with Caribbean Fruit Salsa.
Caribbean Fruit Salsa
Ingredients:
1 Mango peeled and diced
1 Papaya peeled and diced
1 medium red bell pepper diced
1 medium green bell pepper diced
1 C diced fresh pineapple
1 sm red onion diced
3 T fresh cilantro chopped
2 T fresh lime juice
1 T olive oil
How to:
Stir together all ingredients. Cover and chill at least 2 hours. Overnight makes it better.
