Catch ’em & Cook ’em: Delta Style Catfish or Tilapia
Ingredients:
3 C cornflakes finely crushed
2/3 C grated Parmesan cheese
1 tsp paprika
1/2 tsp salt
1/2 C mayonnaise
1 tsp Worcestershire sauce
6 (5 oz) catfish or tilapia fillets
1 1/2 tsp Cajun seasoning
Vegetable cooking spray
3 T chopped fresh parsley
Lemon wedges for garnish
How to:
1. Preheat oven to broil
2. Stir together cereal crumbs, Parmesan cheese, paprika and salt in a large shallow bowl.
3. Whisk together mayonnaise and Worcestershire sauce in small bowl.
4. Brush mayonnaise mixture on both sides of fillets.
5. Sprinkle 1/4 tsp Cajun seasoning onto 1 side of each fillet.
6. Dredge fillets in cornflake mixture and transfer to a wire rack coated with cooking spray.
7. Place wire rack in an aluminum foil lined pan. Broil 6 inches from heat for 6 minutes on each side or until golden brown and fish will flake with a fork.
8.Sprinkle with parsley and serve immediately. Garnish with lemon wedges.
