Stuffed Redfish
Ingredients
1 whole redfish
1 C dried bread crumbs
2 green onions chopped
1/2 tsp Creole seasoning
1 sm onion peeled and quartered
4 sprigs fresh parsley
1/2 C butter melted
Salt and pepper to taste
Lemon juice
How to:
1. Split fish and remove insides. Head and tail can be removed or left on
2. Brush inside with lemon juice
3. Place bread crumbs and quartered onion in food processor and chop until very fine.
4. Add parsley, green onions and Creole seasoning and stir in butter to moisten.
5. Salt and pepper to taste.
6. Stuff into cavity of the fish and place in an oiled baking dish. Pour remaining butter over fish and bake at 350 degrees, covered for about 20 minutes or until fish flakes easily.
