Catch ’em & Cook ’em: Chicken Mango Chopped Salad
Ingredients:
1/4 C mayonnaise
1/4 C sour cream
2 tsp lemon zest
2 Tbsp lemon Juice
2 tsp curry powder
1 tsp grated fresh ginger
1/2 tsp salt
1/8 tsp ground cayenne pepper
3 C chopped or shredded cooked chicken
4 C chopped Napa cabbage
2 C peeled, pitted, and chopped mango
1 small red bell pepper chopped
1/2 English cucumber chopped
1/2 C chopped fresh cilantro
1/4 C chopped red onion
How to:
1. Whisk together mayonnaise, sour cream, lemon zest and lemon juice, curry powder, ginger, salt and pepper in a small bowl.
2. Combine chicken and remaining ingredients in a large bowl.
3. Add dressing and toss to coat.
4. Serve immediately.
