Catch ’em & Cook ’em: Lucille’s Meat Loaf
Ingredients:
2 lb ground beef
1 medium onion
1/4 tsp garlic chopped
1 rib celery chopped
1/2 tsp Worcestershire sauce
1/2 tsp black pepper
1/2 green pepper finely chopped
1 C milk
2 slices bread
2 eggs lightly beaten
2 strips bacon
How to:
1. Mix together in a large bowl, ground beef, onion, garlic, celery, green pepper, Worcestershire sauce, black pepper.
2. In another bowl, soak the bread in the milk. Add eggs and mix into the meat mixture.
3. Mix well and firm into a loaf.
4. Place bacon on top of the loaf and bake in a pre-heated 375 degree oven until bacon is brown and then reduce heat to 325 degrees and bake for 45 minutes.
5. In the mean time, make the glaze by mixing together in a small bowl: 3 Tbsp brown sugar, 1/4 C ketchup, 1/2 tsp dry mustard and 1 tsp cider vinegar.
6. When the meat loaf is done, spread glaze over top of loaf and bake an additional 15 minutes.
7. Let the meat loaf rest for 10 minutes before putting on a platter and serving.
