Catch ’em & Cook ’em: Fruits De Mer (Fruits of the Sea)

Ingredients:

1 lb assorted bite-sized chunks of fish, shrimp, scallops, etc.

1 T butter

1 T olive oil

2 T garlic minced

1/2 C roma tomato chopped

1/2 C dry white wine

1/2 C fresh basil chopped

Salt and pepper to taste

How to:

1. Heat butter and olive oil in a skillet over medium heat.

2. Add garlic and saute until flagrant.

3. Add fish and sear on all sides.

4. Once the fish is slightly brown, add tomatoes and stir.

5. Salt and pepper to taste.

6. Add wine and cover and cook until the seafood is done.

7. Just prior to serving add basil and stir gently.

8. Serve with fluffy white rice.
