More Thanksgiving recipes
My partner and co-author of this column, Jeanne Adams and I have put this series of Thanksgiving recipes in the newspaper several times over the years. Many people have thanked us for this menu which will run for the next four weeks. We hope that you will clip these recipes and keep them in your Capt. Dick’s cookbook.
Granny’s Green Beans
Ingredients:
10 slices of bacon – cut into small pieces
2 onions – cut into small pieces
2 lb. fresh green beans or 3 cans of whole green beans
3 cans chicken stock
How to:
In a dutch oven saute the bacon and onions in 3 Tbsp. butter until the bacon is cooked and the onions are transparent. Add the green beans and chicken stock. Add water to cover the green beans if necessary. Cover and cook at medium-low heat until the beans are limp. This usually takes about four hours with fresh green beans. Salt and pepper to taste.
My Mother’s Apple Strudel Pie
Ingredients:
6 cups fresh tart apples – peeled and sliced 1/4 inch thick
1-1/2 cup sugar
1/4 cup light brown sugar
1 Tbsp. flour
1/4 cup raisins
Juice from 1/2 lemon
1 tsp. cinnamon
1/2 tsp. nutmeg
1 Tbsp. melted butter
2 Tbsp. cold water
1 (10 inch) deep dish frozen pie shell
How to:
Place apples, sugar, flour, raisins and seasoning in a bowl and toss. Add the melted butter and water. Place this mixture into the unbaked pie shell and level it.
Streusel topping
1/2 cup flour
1/4 cup softened butter
1/4 cup sugar
1/4 cup brown sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg
How to:
Cut butter into flour until crumbly. Mix the rest of the ingredients into the flour mixture. Pile (do not pack) the topping onto the pie. Place pie in a preheated 425 degree oven and bake for 10 minutes. Reduce the heat to 325 degrees and bake for one hour. Mix together: 1 cup powdered sugar, 2 Tbsp. Lemon juice. Drizzle over the warm pie. Allow pie to cool before serving.

Fruit Salad
(make the day before)
Ingredients:
1 (64 oz) pkg. frozen family size mixed fruit (we found this at Publix)
1 (15 oz) can chunky mixed fruit with juice
1 (20 oz) can pineapple chunks with juice
1 (4 oz) pkg. frozen blueberries
3 bananas – sliced
1 (8 oz) can mandarin orange slices
1/2 of a (7 oz) pkg. shredded coconut
How to:
Mix all ingredients together and refrigerate covered to meld the flavors.
Fresh Cranberry Sauce
(make two days before)
Ingredients:
1 (12 oz) bag of fresh cranberries
1 cup water
1 cup sugar (or more to taste)
How to:
Wash the cranberries.
Bring the water to a boil and then add the cranberries and sugar. Cook for 10 minutes or until the skins pop. Skim off the white froth and let cool. Refrigerate until ready to serve.
Sweet Potato Casserole
(make the day before and
refrigerate until time to bake)
Ingredients:
3 cup cooked and mashed sweet potatoes
1/2 cup sugar
8 oz. cream cheese – softened
2 eggs
Dash of salt
How to:
Using a mixer, mix the cream cheese, sweet potatoes, eggs and sugar, in that order. Place in a buttered casserole dish. Make the topping and put on top of the sweet potato mixture. Drizzle with 1/2 cup of melted butter and bake at 350 degrees for 30 minutes.
Topping:
1 cup chopped pecans
1 cup crushed corn flakes
1/2 cup brown sugar
