Steamed Garlic Crab

Broth:

1 cup canola oil

2 quarts whole garlic bulbs – chopped with peeling on

1/4 garlic salt

2 Tbsp. black pepper

2 Tbsp. crushed red pepper

1/4 cup Old Bay

1 cup white vinegar

1 gallon water

How to:

Preheat oil to about 350 degrees. Place chopped garlic and spices into the oil. Brown but DO NOT SCORCH. Add vinegar and water and simmer for 15 minutes. Strain through fine mesh sieve and discard garlic. Set broth aside. For each half dozen crab, you need 9 ounces of broth. Add 1 Tbsp. of dry parsley and steam two minutes and serve.
