Low country grill
Many of you have tried our Low Country Boil and have told us how much you like it. Try this for a different take on this old fashioned meal.
Ingredients:
2 Tbsp. olive oil
1 tsp. salt, divided
1 tsp. garlic powder, divided
1 tsp. Old Bay seasoning, divided
12 small red potatoes, quartered
1/3 c. butter, melted
1 lb. smoked kielbasa
3 med. ears sweet corn, shucked and cut in half
1-1/2 lbs. uncooked medium
shrimp, peeled and deveined
How to:
In a large bowl, combine the oil with 1/4 teaspoon each of salt, garlic powder and Old Bay. Add the potatoes and toss to coat. Spoon the potatoes onto a greased double thickness of heavy duty foil about 18 inches square. Fold the foil around the potatoes and seal tightly. Grill, covered, over medium heat for 30 to 35 minutes or until tender, turning once. Set aside and keep warm.
In a small bowl, combing the butter with the remaining salt, garlic powder and Old Bay.
Grill the kielbasa and corn, covered, over medium heat for 10 to 12 minutes or until the kielbasa is heated through and the corn in tender, turning occasionally and basting the corn with half of the butter mixture. Keep warm.
Tread the shrimp onto four metal or soaked wooden skewers and grill, covered, over medium heat for three to four minutes on each side or until the shrimp turns pink, basting with remaining butter mixture.
Slice the kielbasa into six pieces before serving.
Carefully open the foil from the potatoes and allow the steam to escape.
