Baked fish with herbed broccoli
Ingredients:
1 lb. broccoli, trimmed and cut into florets
3 Tbsp. olive oil
Coarse salt and ground pepper
1 dinner or hamburger roll, torn into pieces
2 tsp. chopped fresh thyme
2 Tbsp. butter, melted and cooled
4 fillets of trout, tilapia or cod
Lemon wedges for serving
How to:
Preheat the oven to 415 degrees with the rack in the upper third of the oven.
On a rimmed baking sheet, toss the broccoli with two tablespoons of olive oil, one teaspoon of salt and 1/4 teaspoon of pepper. Roast until the broccoli is tender and lightly browned, 15 to 20 minutes, tossing half-way through.
Meanwhile, in a food processor, pulse the bread, thyme, 1/4 teaspoon of salt and 1/8 of a teaspoon of pepper until coarse crumbs form.
Transfer the bread crumbs to a bowl and stir in butter with a fork.
Coat another rimmed baking sheet with one tablespoon of olive oil and arrange the fish on the sheet and season with salt and pepper.
Top each fillet with enough bread crumbs to coat, pressing firmly to adhere.
Bake until the fish is opaque throughout and the bread crumbs are golden brown, about eight minutes.
Serve the fish with broccoli and lemon wedges.
