Asian fish with vegetables
Ingredients:
4 c. shredded cabbage
1 med. red pepper, cut in slivers
6 sliced scallions, with green
2 fillets of mahi mahi, flounder or farm raised catfish
Sauce:
2 lg. garlic cloves, crushed
1/3 c. dry roasted, unsalted peanuts, crushed in the blender
2 Tbsp. grated fresh ginger
1/3 c. water
1 tsp. cornstarch
3 Tbsp. soy sauce
1 tsp. sesame oil
1 Tbsp. rice vinegar
Garnish:
1/4 c. chopped cilantro
1 lime
How to:
Spread the vegetables over the bottom of a shallow microwave-safe dish. Top with the fish.
In a small bowl, combine the sauce ingredients and pour over the fish. Cover tightly with plastic wrap and microwave on high for 8 to 10 minutes. The vegetables will be crisp-tender. Place each fillet on a plate and spoon the vegetables and sauce around the fish. Garnish with cilantro and a squeeze of lime juice.
Serve with brown rice.
