Four cheese lasagne
Ingredients:
1 lb. ground beef
1 med. onion, chopped
2 cloves garlic, minced
1 (28 oz.) can crushed tomatoes
2 (4 oz.) cans mushrooms stems and pieces drained
1 (6 oz,) can tomato paste
1 tsp. salt
1 tsp. dried oregano
1 tsp. dried basil
1/2 tsp. black pepper
1/2 tsp fennel seed
1 (16 oz.) carton cottage cheese
2/3 c. grated parmesan cheese
1/4 c. shredded cheddar cheese
1-1/2 c. shredded mozzarella cheese, divided
2 eggs, beaten
1 (12 oz.) pkg. lasagne noodles, cooked and drained
How to:
In a skillet over medium heat, cook the beef, onion and garlic until the meat is no longer pink and the onion is tender. Drain.
In a blender, cover and process the tomatoes until smooth. Stir into the beef mixture along with the mushrooms, tomato paste and seasonings. Simmer for 15 minutes.
In a bowl, combine the cottage cheese, parmesan cheese, 1/2 cup of mozzarella and eggs. Spread two cups of meat sauce in the bottom of an ungreased 13 x 9 x 2 baking dish. Arrange half of the noodles over the sauce. Spread the cheese mixture over the noodles. Top with the remaining noodles and meat sauce. Cover and bake at 350 degrees for 45 minutes. Uncover and sprinkle with the remaining mozzarella cheese and bake 15 minutes longer or until the cheese melts.
