Trout fillets piccata

Ingredients:

8 fish fillets

1/2 c. flour

Salt, pepper and cajun seasoning

1/2 stick butter

2 Tbsp. capers

2 fresh lemons, sliced

1 tsp. fresh garlic, minced

1/4 c. dry white wine

Fresh parsley

1/2 c. chicken broth

How to:

Dust the fillets with flour seasoned with salt, pepper and cajun seasoning. Saute the floured fillets in butter until golden brown. Keep the fish warm in the oven while preparing the sauce.

Deglaze the pan with 1/4 cup of white wine and one teaspoon of minced garlic. Bring to a boil and cook until the liquid is nearly gone. Add 1/2 cup of chicken broth, two tablespoons of fresh lemon juice and two tablespoons of capers into the pan. Add the fillets to the pan and cook for one minute. Add two tablespoons of butter and fresh lemon slices. Place everything on a platter and sprinkle with parsley over the fillets.
