Corn and crab chowder
Ingredients:
1 Tbsp. butter
1 c. chopped onion
1/3 c. chopped celery
1/2 c. chopped green bell pepper
1/2 c. chopped red bell pepper
1 Tbsp. flour
1 – 14.5 can chicken broth
2 c. milk
1 (12 oz.) can evaporated milk
12 oz. crab meat
2 c. fresh or frozen corn
1/2 tsp. pepper
1/2 tsp. paprika
How to:
In a large saucepan, melt the butter and then add onion, celery and bell peppers. Saute uncovered, over medium heat for 4 to 5 minutes or until vegetables are soft. Gradually add flour to the vegetable mixture and cook for two minutes, stirring constantly. Slowly stir in chicken broth and bring to a boil. Add milk, evaporated milk, crab meat, corn, pepper and paprika. Heat, stirring occasionally, for five minutes or until the chowder is hot.
