Baked seafood extravaganza

Ingredients:

12 sm. fish fillets

1/2 lb. bay scallops

1/2 lb. small shrimp, peeled

4 Tbsp. butter

3 Tbsp. olive oil

1 sm. onion, chopped

1 sm. zucchini, unpeeled and chopped

1/2 c. fresh mushrooms

1 1/2 tsp. old bay seasoning

1 3/4 c. crushed Ritz crackers

2 Tbsp. butter, melted

Salt and pepper to taste

How to:

In a large skillet at medium-high setting, heat the oil and butter and add the onion, zucchini and mushrooms. Cook, stirring often, until the vegetables are softened and lightly brown. Add the scallops, shrimp and seafood seasoning and cook, stirring until the seafood is just cooked through, about 3 to 4 minutes. Remove from heat.

Add cracker crumbs to the seafood and vegetables and stir well. Season to taste with salt and pepper.

Preheat the oven to 400 degrees. Brush a 9X13 inch baking dish with melted butter. Cover the bottom of the dish with small fish fillets, seasoned with salt and pepper. Cover the fillets with the seafood stuffing and press the stuffing into an even layer. Top with the remaining fillets. Brush the fish with melted butter and bake for 15 to 20 minutes or until the fish is cooked through and the stuffing is thoroughly heated.

With a spatula, remove each serving in the form of a hot “sandwich” with stuffing between the fillets.
