Acadian-style crab salad on croissants
Ingredients
2 (6 oz) tubs fresh lump crab meat
2 ribs celery from the heart, finely chopped
1/4 c. white onion, finely chopped or grated
3 Tbsp. mayonnaise
1/4 c. chili sauce
1 tsp. tabasco sauce
1 tsp. worcestershire sauce
Salt and pepper
4 leaves of bibb or leaf lettuce
4 lg. croissants, split lengthwise
How to
Run your fingers through the crab meat to remove any bits of shell. In a bowl, combine the celery, onion, mayonnaise, chili sauce, hot sauce and worcestershire sauce and mix well. Add the crab meat to the bowl and mix with a fork. Season with salt and pepper to your taste. Pile the salad on lettuce leaves in the croissants. Cut each croissant in theirs on angles, following the shape of the pastry.
