St. Paddy’s supper

Ingredients

1 sm. onion, sliced

4 sm. carrots, cut into chunks

2 med. potatoes, cut into chunks

1 corned beef brisket with spice packet (1 lb.)

1/3 c. unsweetened apple juice

2 whole cloves

1 Tbsp. brown sugar

1/2 tsp. grated orange peel

1/2 tsp. yellow mustard

2 cabbage wedges

How to

Place the onion in a slow cooker. Top with carrots, potatoes and brisket.

Combine the apple juice, cloves, brown sugar, orange peel, mustard and contents of the spice packet. Mix well and pour over the brisket. Cover and cook on high heat for 3-1/2 to 4 hours.

Add the cabbage wedges and cover and cook for 20 to 30 minutes longer or until the meat and vegetables are tender.

Strain the broth and discard the cloves. Serve pan juices with the meat and vegetables.

Irish soda muffins

Ingredients

1 c. plus 2 Tbsp. flour

1/4 c. plus 1 tsp. sugar, divided

1 tsp. baking powder

1/4 tsp. salt

1/2 c. sour cream

2 Tbsp. vegetable oil

2 Tbsp. beaten egg

1/2 c. raisins

How to

In a small bowl, combine the flour, 1/4 cup of sugar, baking powder, baking soda and salt.

In another bowl, whisk the sour cream, oil and egg.

Stir the wet mixture into the flour mixture, just until moistened. Fold in raisins. Fill six paper-lined muffin cups half full.

Sprinkle the remaining sugar over the muffins and bake at 400 degrees for 15 to 18 minutes or until a toothpick comes out clean.

Move the muffins to a wire rack and cool for five minutes.

Serve warm.
