Beer battered fish & chips

Ingredients:

2 eggs, beaten

1 bottle beer

1-1/2 c. flour

1/4 tsp. salt

1/4 tsp. pepper

1/2 tsp. baking powder

Cornstarch for dredging

8 pieces of fish, any kind

How to:

Heat cooking oil in a deep pan or fryer to 375 degrees. Pour the beer straight into a bowl and let it go flat, then mix with the beaten eggs.

Mix the dry ingredients together and add to the beer mixture, mixing well. Dredge the fish lightly in cornstarch. Shake off excess cornstarch and dip the fish into the beer batter and slide them into the hot oil. Cook until done.

Old English chips

Ingredients:

8 baking potatoes

How to:

In a Dutch oven, heat two inches of oil to 400 degrees. Do not peel the potatoes. Slice them in 1/4 inch slices, sliced horizontally. Slide them into the oil and cook until they rise to the top. Remove the potatoes from the oil and let them drain on a wire rack over newspaper. Serve with the beer battered fish.
