Salmon loaf

Ingredients:

1 (lb.) can salmon

1/2 c. cracker crumbs

2 eggs, beaten

1 sm. onion, minced

2 stalks celery, minced

1/4 tsp. pepper

4 Tbsp. mayonnaise

Salt to taste

1/2 can cream of chicken soup

1 c. cooked rice

How to:

Drain the salmon, reserving the juice. Remove any skin and bones. Combine the salmon with reserved juice and cracker crumbs in a bowl. Add the eggs, onion, celery, pepper, mayonnaise, rice, salt and soup.

Mix well and place in a greased loaf pan. Bake at 350 degrees for 45 minutes.

Serve with Olive Sauce

Olive Sauce

Ingredients:

1/2 c. milk n 2 Tbsp. mayonnaise

1 tsp. olive juice n 12 sliced stuffed olives

1/2 can, cream of celery soup

How to:

Combine the milk, mayonnaise, olive juice and soup in a saucepan.

Cook, stirring, over boiling water over a low heat until blended and heated through.
