Individual crab cassolettes
Ingredients
3 Tbsp. butter
3 Tbsp. flour
2 c. milk
2 eggs, beaten
2/3 c. grated cheddar cheese
1/2 tsp. salt
Pepper to taste
1/2 tsp. dry mustard
1 c. crab meat
How to
Melt the butter in a saucepan and blend in the flour. Add the milk and cook, stirring constantly, over medium heat until the mixture thickens.
Combine the eggs, cheese, salt, pepper, mustard and crab meat and blend well.
Stir the crab mixture into the mild mixture and heat through.
Place mixture in four small or two medium custard cups.
Bake at 375 degrees for 25 minutes or until brown and bubbly.
