Golden salmon casserole

Ingredients

1 sm. green pepper, chopped

2 med. onions, chopped

3 Tbsp. butter

4 Tbsp. flour

3/4 tsp. salt

2 c. milk

2 c. flaked salmon

1 Tbsp. lemon juice

1 c. cooked green peas

How to

Sauté the green peppers and onions in butter in a saucepan over low heat for five minutes or until tender.

Blend in the flour and salt.

Stir in the milk gradually and bring to a boil, stirring constantly. Cook for one minutes longer, stirring.

Stir in the salmon, lemon juice and peas and pour into a greased eight inch casserole.

Place the cheese biscuits (recipe below) on top and bake at 425 degrees for 20 to 25 minutes or until the biscuits are brown.

Pimento-cheese biscuit topping

Ingredients

1 c. sifted flour

1 1/2 tsp. baking powder

1/2 tsp. salt

3 Tbsp. shortening

1/3 to 1/2 c. milk

2 pimentos, chopped

3/4 c. grated sharp cheese

How to

Sift the flour with baking powder and salt in a bowl. Cut in the shortening until the mixture is the consistency of meal.

Stir in enough milk to make soft dough.

Kneed lightly on a floured board and roll out into a rectangle 1/2 inch thick.

Sprinkle with pimentos and cheese. Roll as for a jelly roll and cut into one inch thick slices.

Place the biscuits on the salmon mixture.
