Redfish teriyaki

Ingredients:

1 (16 oz) can chunk pineapple

1/2 c. soy sauce

1/2 c. sherry

2 Tbsp. brown sugar

1 tsp. ground ginger

1 tsp. dry mustard

1 garlic clove, crushed

2 lb. redfish fillets, cut into 1 inch cubes

1 green bell pepper, cut into 1 inch squares

Cherry tomatoes, mushrooms, onions – optional

How to:

Drain the pineapple and reserve 1/4 cup of the juice.

Combine the pineapple juice, soy sauce, sherry, brown sugar, ginger, mustard and garlic.

Pour the mixture over the fish cubes. Cove and marinate in the refrigerator for at least one hour.

Thread the fish cubes, pineapple, green pepper squares, cherry tomatoes, fresh mushrooms and onion wedges alternately on skewers.

Cook on a grill over hot coals or under the broiler, four inches from the heat source for five minutes.

Turn and cook for five additional minutes or until the fish flakes easily with a fork.

Makes six servings or 18-20 appetizers.
