Potato crusted trout or snapper
Ingredients:
3/4 c. instant potato flakes
2 Tbsp. olive oil
Salt and ground black pepper
2 fish fillets
1 tsp. thyme
2 eggs
How to:
Combine the potato flakes, salt, pepper and thyme in a shallow dish.
Lightly beat the eggs in a second shallow dish.
Dip the fish in the eggs and then dredge in the potato flake mixture.
Heat the olive oil in a large skillet until it is hot.
Saute’ the fish fillets for four to five minutes on each side or until done.
