Basil stuffed shrimp wrapped in bacon

Ingredients

1/2 c. olive oil

2 tsp. crushed red pepper

1 lb. large shrimp

1/3 c, chopped fresh basil leaves

1-1/2 Tbsp. parmesan cheese

2 garlic cloves, minced

16 pieces of bacon, thinly sliced

How to

Preheat the oven to 400 degrees.

Mix the olive oil and crushed red pepper in a small bowl and set aside.

Peel and devein the shrimp, leaving on the tails.

Butterfly the shrimp by cutting a slit along the back and gently pressing open.

Combine the basil, parmesan cheese and garlic in a small bowl. Place the basil mixture evenly in the shrimp openings and press the shrimp closed.

Cook the bacon over a medium heat until partially cooked. Drain on paper towels.

Wrap each of the shrimp with one slice of bacon and place on a greased baking sheet.

Brush infused olive oil over the shrimp and bake for 8 to 9 minutes.

Serves 8 as an appetizer.
