Capt. Dick’s Recipes: Garlic shrimp and avocado tacos
Ingredients:
– 1 avocado, diced
– 1 c. finely chopped peeled cucumber
– 3 Tbsp. minced cilantro
– 2 tsp. lime juice
– 1/4 tsp. salt
– 1/8 tsp. pepper
– 1 tsp. olive oil
– 16 shelled, deveined uncooked medium shrimp, tails removed
– 2 garlic cloves, minced
– 8 corn taco shells, warm
– 3 c. baby spinach or shredded lettuce
– 1 c. salsa
– 1/2 c. non-fat sour cream
How to:
Mash the avocado in a small bowl using a fork. Stir in the cucumber, cilantro, lime juice, salt and pepper.
Heat the oil in a medium skillet over a medium-high heat until hot. Cook the shrimp and garlic for two minutes or until the shrimp turns pink.
Fill each taco shell with the shrimp, spinach or lettuce, avocado mixture, salsa and sour cream.
Makes 8 tacos.
