Seattle salmon potlatch

This recipe came from one of our readers out here on the island.
Ingredients:
Salmon fillets, one 4 oz. fillet per person
Stewed tomatoes
Chopped sweet onion
Chopped celery with leaves
Lemon slices
Sprinkle of hot sauce
Worcestershire sauce
Salt and pepper
Cooked rice
How to:
The amount of ingredients depends on how many will be eating.
Spray Pam cooking spray on a large sheet of heavy-duty foil, twice the size of the grill.
Place the fillets on the foil and cover with the mixture. Fold the foil and seal shut.
Bake on the grill for 30 to 45 minutes. After 30 minutes, open the foil and smoke with hardwood chips.
Serve over rice.

Easy fish
Mix apricot jam and hot sauce with a little water to make a sauce instead of the tomatoes.
Use the same process as with the Potlatch dish, using the foil. Oven bake or grill.
Serve over noodles or rice.
