Panko crusted sheepshead
Ingredients:
– Rice
– 1 c. rice
– 2 c. water
– Dash of salt
– Dash of cumin
– Zest and juice of 1 orange
– 1 tbs. chopped cilantro
How to:
Bring two cups of water, salt, cumin and juice to a boil.
Add the rice and cover and cook until done.
Add zest and cilantro
– Fish
– 1/3 c. flour or tempura batter mix, seasoned to taste
– 1 c. panko breadcrumbs
– 1 egg, slightly beaten with two tablespoons of water
Dredge fillets in seasoned flour, then egg wash,the panko breadcrumbs.
Heat two tablespoons of oil in saute pan and cook fillets until they are golden brown, approximately two minutes.
Place saute pan with fish in a pre-heated 300 degree oven for 10 to 15 minutes or until fish are cooked through.
Serve the fish over the orange rice. Sprinkle with orange juice and chopped cilantro.

Prosciutto-wrapped scallops
Ingredients:
– 1/4 c. chopped sun dried tomatoes
– 2 tbs. chopped fresh basil leaves
– 2 tbs. copped pitted black olives (about 10 olives)
– 1/4 c. olive oil
– 12 medium scallops
– 1/4 tsp. salt
– 1/4 tsp. freshly ground black pepper
– 12 slices prosciutto
– 2 c. arugula
– 1-1/2 tbs. balsamic vinegar
How to:
Preheat the oven to 350 degrees.
In a food processor or blender, add the tomatoes, basil, olives and olive oil and process until it is finely chopped.
Season both sides of the scallops with salt and pepper.
Rub each scallop with the tomato mixture.
Fold each slice of prosciutto in half lengthwise and then wrap each scallop in one slice of prosciutto.
Place the wrapped scallops in a buttered baking dish, seam side down.
Bake until the scallops are cooked through, about 15 minutes.
In a medium bowl, toss the arugula with the balsamic vinegar. Season the arugula with salt and pepper.
Place the arugula on a serving platter or divide among individual dishes.
Top with the scallops and serve immediately.
