Fish cakes
This is one of the easiest recipes that we have found for fish cakes.
Ingredients:
n 1 pkg. (16 oz.) Stove Top Stuffing Mix
n 3/4 c. water
n 1/3 c. mayonnaise
n Mix together and add the following
Option 1
n 2 (16 oz) cans crabmeat, drained
n 3 tbs. tartar sauce
n 1/2 c. finely chopped celery
Option 2
n 2 (6 oz) cans salmon, drained, skin and bones discarded
n 1 tbs. lemon juice
n 1 c. shredded mozzarella cheese
n 1/2 c. chopped green onion
Option 3
n 2 (6 oz) cans tuna, drained and flaked
n 2 tbs. sweet pickle relish
n 1 c. shredded cheddar cheese
n 1/2 c. shredded carrots
Option 4
n 3 (4 oz) cans cooked shrimp, drained
n 1/4 c. barbeque sauce
n 1/2 c. finely chopped green peppers
How to:
Mix the stuffing mix, water and mayonnaise and whichever of the options you desire. Refrigerate for 10 minutes. Heat a large non-stick skillet sprayed with cooking spray on a medium heat. Shape 1/3 cupfuls of the mixture into patties and add to the skillet in batches. Cook three minutes on each side or until golden brown on both sides, turning over carefully.
