Thanksgiving Day Menu – Part 4
Mother’s apple streusel pie
Ingredients:
– 6 c. fresh tart apples, peel and sliced 1/4 inch thick
– 1-1/2 c. sugar
– 1/4 c. light brown sugar
– 1 tbs. flour
– 1/4 c. dark currents or raisins
– Juice from 1/2 lemon
– 1 tsp. cinnamon
– 1/2 tsp. nutmeg
– 1 tbs. melted butter
– 2 tbs. cold water
– 1-10 inch frozen pie shell
How to:
Place apples, sugars, flour, currents and seasonings in a bowl and toss. Add melted butter and water.
Place this mixture into the unbaked pie shell and level it.
Streusel topping
Ingredients:
– 1/2 c. flour
– 1/4 c. softened butter
– 1/4 c. sugar
– 1/4 c. light brown sugar
– 1/2 tsp. cinnamon
– 1/4 tsp. nutmeg
How to:
Cut the butter into the flour until it is crumbly. Mix the rest of the ingredients into the flour mixture.
Pile, do not pack, the topping onto the pie.
Place the pie in a preheated 425 degree oven and bake 10 minutes. Reduce the heat to 325 degrees and bake for one hour.
While still warm, add streusel glaze.
Streusel glaze
Ingredients:
– 1 c. powdered sugar
– 2 tbs. fresh lemon juice
How to:
Mix both ingredients together until smooth and drizzle over the warm pie.
Allow the pie to cool before serving.
