Cupcake Express doubles in size

After just nine months in business, Cupcake Express is expanding.
Cyndie Welker and Therese Dotsey started Cupcake Express last November selling cupcakes and other baked goods from their Cupcake Express truck at Farmer’s Markets and other venues.
In April of this year they opened a retail store at 10731 Stringfellow Road using one half of the available store space for their business.
“We’re very excited to announce that we’ve decided to expand our business so we can place indoor tables and chairs for our customers,” Welker said. “We also will be offering breakfast beginning in the fall.
“Tonight Modern Woodmen of America is hosting an event to introduce themselves to the community,” Welker said. “Modern Woodmen is a member-owned fraternal financial services organization that offers life insurance, annuities, retirement planning and other financial services. Modern Woodmen is a very community oriented organization and should fit well on the Island.”
Liz Martin, local financial representative, said, “This is the first meeting of the Pine island Chapter and we plan on having social events monthly at different businesses located throughout the area.”
A perfect blending of talents brought Welker and Dotsey together. Welker does the baking and Dotsey brings the artistic side to the business and decorates the cakes. Dotsey also won this year’s MangoMania Art Contest. Her artwork appeared on the official MangoMania adult T-shirt.
Cupcake flavors include: German chocolate, vanilla w/chocolate icing, red velvet, chocolate lovers, coconut, chocolate peanut butter, carrot, banana, lemon, Key Lime, vanilla and pumpkin.
Cupcake Express also create holiday gourmet cupcakes, birthday party cupcakes and custom gourmet cupcakes.
“We have just added cinnamon rolls, jumbo muffins and brownies,” Welker said. The newest additions are cheesecakes and Key Lime pie. Both are available in full size and minis.
Cupcake Express has also started working with Ray Booth of Ray’s Island Bakery. Booth has been an Island resident for 7 years and has been baking for 30 or 35 years. His specialties are cakes, specialty cakes, fondant cakes and cookies. “Now, in addition to cupcakes, customers can come in and pick up a cake,” Booth said.
Custom cakes for any occasion are available in any cupcake flavor starting at $25 for a 1/4 sheet. One-day notice is all they need when ordering and they have free local delivery for all orders.
“Stop in for a latte, cappuccino or espresso … and, of course, some cupcakes” Dotsey said. “Come and relax in our new indoor dessert dining room or our outdoor dessert cafe.”
