Catch ’em & Cook ’em: Trout with Pecans & Lime Cayenne Butter

Ingredients:

4 fillets of fish

1 tsp salt

1/2 stick butter

1/4 C flour

1/3 C chopped pecans (rough cut)

1/8 tsp cayenne pepper

1 Tbsp honey

2 Tbsp julienne sliced red pepper

1 Tbsp fresh squeezed lime juice

How to:

1. Lightly salt the fillets

2. Dredge in flour

3. Saute in 2 Tbsp butter on medium temperature until golden brown and done.

4. Remove to platter and hold in warm oven.

5. Melt remaining butter in same skillet and add pecans and cayenne pepper.

6. When pecans are hot, stir in honey and red bell peppers and cook until pecans are caramelized.

7. Remove fish from oven and drizzle sauce over fish.

8. Serve immediately.

This recipe works well with sea trout, grouper, farm-raised catfish, tilapia and mangrove snapper.
