Fish Tacos with Mango Salsa Verde
Ingredients:
SALSA
C chopped peeled mango
C chopped green tomato
2 Tbsp finely chopped red onion
4 tsp chopped fresh cilantro
1 tsp fresh lemon juice
tsp black pepper
tsp chili powder
TACOS
2 (6 oz) tilapia fillets
Cooking spray
tsp Old Bay seasoning
3 (8 inch) while wheat flour tortillas
1 C mixed salad greens
How to:
1. To prepare salsa, combine mango, tomato, red onion, cilantro, lemon juice, black pepper and chili powder in a small bowl and toss well.
2. To prepare tacos, preheat broiler.
3. Place fish on a broiler pan coated with cooking spray.
4. Sprinkle fish evenly with Old Bay seasoning and broil for 6 minutes.
5. Heat a medium nonstick skillet over medium-high heat.
6. Lightly coat tortillas with cooking spray.
7. Add the tortillas to the pan, one at a time and cook for 1 minute on each side or until lightly toasted.
8. Divide fish evenly among tortillas and top each taco with C greens and C salsa.
9. Serve immediately.
