Oyster pan roast

Ingredients:

32 freshly opened oysters

8 Tbsp. butter

4 tsp. chili sauce

4 tsp. worcestershire sauce

1 c. oyster liquid

2 tsp. paprika

Dash celery salt

Dash dry white wine

2 c. cream

4 pieces dry toast

How to:

In the top of a double broiler, place the oysters, 4 tablespoons of butter, chili sauce, worcestershire sauce, oyster liquid, paprika, celery salt and white wine. Place over boiling water. Whisk or stir briskly for about one minute until the oysters are just beginning to curl. Add the cream and continue stirring briskly, just to a boil. Do not boil. Pour pan roast into a soup plate over the slice of dry toast. Top with one tablespoon of butter each and sprinkle with paprika.
