Pork schnitzel
Ingredients:
1/4 c. flour
1 c. bread crumbs
2 eggs
4 pork cube steaks
2 tsp. coarse salt
1/4 tsp. pepper
4 Tbsp. vegetable oil, divided
How to:
Place flour in a shallow bowl crumbs in a second bowl. In a third bowl, beat eggs gently in a until blended.
Preheat a large saute’ pan on medium-high heat for two to three minutes.
Season both sides of the pork with salt and pepper. Dip the pork in the flour, coating both sides, then dip into the eggs, allowing excess to drip off. Finally, dip the pork into the bread crumbs.
Place two tablespoons of oil in the pan and swirl to coat. Place two pork steaks in the pan and cook for four to five minutes on each side or until the internal temperature is 160 degrees. remove the pork steaks from the pan and cover to keep warm. Repeat the steps with the remaining two tablespoons of oil and two pork steaks.
