Baked chicken with butter and bream

Ingredients:

1 cut up broiler/fryer

1/2 c. flour

1 1/2 tsp. salt

1/2 tsp. paprika

1/4 tsp. pepper

1/4 c. butter

1/2 c. nonfat dry milk powder

1-1/2 c. hot water

How to:

Dip the chicken in cold water. Combine flour, salt, paprika and pepper in a shallow bowl. Roll each chicken piece in the flour mixture, coating evenly. Place the chicken skin-side up, in a 9X13 inch baking dish. Dot with butter and bake at 425 degrees for 30 minutes or until the chicken is golden brown.

Dissolve the milk powder in the hot water and pour around the chicken. Reduce the oven temperature to 350 degrees, cover and bake for 45 minutes or until the chicken is well done. Serve with green rice.

Makes 4 servings

Green rice

Ingredients:

3 c. cooked rice

1 c. chopped parsley

1/2 c. grated cheddar cheese

1/3 c. chopped onion

1 clove garlic, minced

1 (14 oz) can evaporated milk

2 eggs, beaten

1/2 c. vegetable oil

1 Tbsp. salt

1/2 tsp. season salt

1/2 tsp. pepper

1/4 tsp. MSG

1 lemon, zested and juiced

Paprika

How to:

Mix the rice, parsley, cheese, onion and garlic in a large mixing bowl. Blend in the remaining ingredients except the paprika. Spoon into a greased 2 quart casserole and sprinkle the top with paprika. Bake at 350 degrees for 45 minutes or until a knife inserted in the center comes out clean.
