Key lime chicken
Ingredients:
4 to 4-1/2 lbs, chicken pieces, skin removed
3 cloves garlic, peeled and crushed
1 tsp. ground cumin
1 lemon, sliced with seeds removed
1/4 c. fresh key lime juice
1/4 c. orange juice
1 c. onion, thinly sliced
1/4 c. olive oil, for frying
1 (3 oz) jar pimiento pieces
1 tsp. coarsely ground black pepper
Salt to taste
How to:
Wash and pat dry the chicken pieces with paper towels and set aside.
Mix together the garlic, cumin, lemon slices, lime and orange juice and pour over the chicken pieces in a large bowl. Cover the pieces with onion rings and marinate for about three hours or longer.
Saute the chicken pieces in olive oil until golden brown. Add the pimiento and then season with salt and pepper to taste. Add the marinated ingredients and cook over a medium-high heat for about five minutes. Then, turn to simmer and cook for another 25 to 30 minutes or until done.
