Caribbean fried chicken

Ingredients:

3 lbs. chicken pieces

1 lg. lemon, halved

3 lg. garlic cloves, minced

3 Tbs. paprika

2 tsp. pepper

2 tsp. salt

2 Tbsp. soy sauce

2 Tbsp. hot pepper sauce

2 c. vegetable oil

1 c. flour

How to:

Arranged the chicken pieces in a single layer on a plate. Squeeze the lemon over the chicken and store the chicken in the refrigerator for 15 to 30 minutes.

Rub the garlic into the chicken and sprinkle the chicken, on both sides, with paprika, pepper and salt. Sprinkle the soy sauce and hot pepper sauce evenly over the chicken.

In a large heavy skillet, heat the oil over medium-high heat until hot. Put the flour in a paper or plastic bag. Add the chicken pieces and shake until the chicken is coasted on all sides. Shake off excess. Place the chicken in the oil and cook for 10 to 15 minutes on each side until browned and cooked through. Drain the chicken on several layers of paper towels and serve.
