Capt. Dick releases new cookbook

Marianne Paton At the urging of his readers, Capt. Dick May along with his partner, Jeanne Adams, recently announced the release of their second cookbook, “Captain Dick’s Florida Gulf Coast Cookbook - Seafood and Much More.”

Those looking for the perfect recipe for an intimate dinner for two or to feed the whole crew need look no further. Earlier this month, Capt. Dick May along with his partner, Jeanne Adams, released their second cookbook, “Captain Dick’s Florida Gulf Coast Cookbook – Seafood and Much More.”

“Since we have sold out two printings of the first cookbook, Jeanne suggested we do another one,” said May. “Also many people have approached us both to put together a new one so we spent nearly a year going over 2,400 recipes for the new book.”

The spiral-bound 131-page book contains 247 original recipes and is nearly twice the size of May’s first book. Everything from soup to nuts can be found in the pages of the book with recipes from guacamole to crab and mango salad and pork ribs or stuffed fillets of sole to May’s orange rolls and Texas pecan pie.

May grew up in the restaurant business and spent more than 35 years working for and later running two nationwide full-service restaurant companies. He also managed 133 restaurants including steak houses, seafood, Mexican, Italian restaurants, sports bars and casual dining restaurants.

An avid fishermen, May has spent many years fishing Pine Island Sound with his close friend, Capt. Bob Allen. On retiring to Bokeelia, it was Allen who encouraged May to obtain his captain’s license and start a fishing guide business of his own. To promote his business, Easy Rider Charters, nearly six years ago, May began contributing a weekly recipe column for the Pine Island Eagle, which inspired his first cookbook.

May’s life partner, Adams, is a special event coordinator for Six Flags Over Texas. Prior to her position with Six Flags, Adams held the same post for Silver Dollar City in Branson, Mo. Each summer, she and May return to Branson for a week or two so that Dick can fish with his son and Jeanne can catch up with old friends.

“You should visit Branson some time,” said Adams. “It is a great vacation spot with more theater seats than New York City as well as great golf courses and world class rainbow trout fishing.”

Both May and Adams are very active in the island community. May is a member of the Greater Pine Island Chamber of Commerce and the Matlacha Mariners. He also gives lectures on fishing and fish recipes at the Pine Island Public Library, Olde Pine Island Marina and Cape Tool and Tackle and annually participates in the Kiwanis Club Taste of Pine Island and the Seafood Festival sponsored by the Matlacha Mariners.

Adams is the current president of the Matlacha-Pine Island Fire Control District Fire Auxiliary, is the membership chair for the Bokeelia Civic Association and volunteers each week at the Pine Island Public Library.
