Crab stuffed red snapper

Ingredients:

1-4 lb. red snapper

Salt and pepper to taste

1/3 c. minced onion

3 Tbsp. butter

1/2 lb. crab meat

1/2 c. fresh bread crumbs

1/4 c. chopped parsley

1/4 c. heavy cream

1/4 tsp. thyme

1/3 c. melted butter

1/3 c. dry white wine

How to:

Sprinkle the red snapper cavity with salt and pepper.

Saute’ the onion in butter until golden brown, then mix in the crab meat, bread crumbs, parsley, cream and thyme.

Stuff the snapper with the crab mixture and sew or skewer the edges together. Place in a greased baking pan.

Combine the melted butter and wine and pour over the snapper.

Bake uncovered for 45 minutes in a 400 degree oven, basting frequently with pan juice.
