Tater-dipped oven-fried fish

Ingredients:

2 eggs, slightly beaten

2 lb. fish fillets

Salt and pepper to taste

2 c. Instant potato flakes

1/2 c. butter

2 Tbs. lemon juice

How to:

Combine the eggs and 1/4 cup water. Dip the fish in the egg mixture.

Sprinkle the fish with salt and pepper and roll in potato flakes.

Melt the butter in a large shallow baking pan and stir in the lemon juice.

Place the fish over the butter mixture and bake, uncovered at 400 degrees for 25 to 30 minutes, turning once.
