Macadamia-crusted tilapia or trout

Ingredients:

2 eggs

1/8 tsp. cayenne pepper

1 c. flour

1-3/4 c. macadamia nuts, finely chopped

4 fish fillets

1 Tbsp. butter, melted

How to:

In a shallow bowl, whisk eggs and cayenne pepper.

Place the flour and macadamia nuts in separate shallow bowls.

Coat the fillets with flour, then dip in the egg mixture and coat with nuts.

Place the fish on a greased baking sheet and drizzle with butter.

Bake at 375 degrees for 15 to 20 minutes or until the fish flakes easily with a fork.

Serve with pineapple salsa.

Serves 4

Pineapple salsa

Ingredients:

1 c. cubed fresh pineapple

1/4 c. sweet red pepper, chopped

3 Tbsp. thinly sliced green onions

2 Tbsp. sugar

1 Jalapeno pepper, seeded and chopped

1 Tbsp. lime juice

1/2 tsp. minced fresh ginger root

2 Tbsp. minced fresh cilantro

How to:

In a small bowl, combine all the ingredients and put in the refrigerator to allow the flavors to meld.

Makes 1-1/2 cups salsa
