Capt. Dick’s Recipes: Coconut panko shrimp

Coconut panko shrimp

Ingredients:

– 1 lb. large shrimp (about 20 count)

– 2 eggs

– Flour

– 1 c. milk

– 2 c. panko Japanese bread crumbs

– 2 c. shredded or flaked coconut

– Oil for frying

How to:

Wash and peel shrimp and remove the dark vein.

Blend the eggs with the milk in a shallow bowl.

Thoroughly blend the panko and coconut in a separate bowl.

Dredge each of the shrimp in flour, then dip them in the egg mixture and roll in the panko, coconut mix until well coated.

Place on a platter.

Continue until all of the shrimp are coasted.

Heat the oil in a wok or deep fryer to 350 degrees.

Fry the shrimp several at a time, turning once until golden brown.

Drain on paper towels.
