Jamaican shrimp scampi
Ingredients:
– 1 lb. medium shrimp, peeled and deveined
– 2 tbs. Everglades seasoning
– 1/4 c. white wine
– 2 tbs. olive oil, divided
– 1 tbs. chopped fresh garlic
– 16 oz. linguini, cooked al dante
– 2 tbs. butter, softened
– 1/8 tsp. dried basil
– 1/8 tsp. dried oregano
– 1/2 c. fresh grated parmesan cheese
– 2 tbs. fresh copped parsley
How to:
Lightly dust the shrimp with Everglades seasoning.
In a dry saute pan over medium-high heat on the stovetop, cook the shrimp for two to three minutes per side until they are not quite done.
Remove the shrimp from the pan and reduce the heat.
Add the white wine to the saute pan and stir to dissolve the blackened bits.
Add one tablespoon of olive oil and garlic and let the mixture simmer for about one minute.
Add the cooked pasta and stir until heated through.
Toss the remaining one tablespoon of olive oil, butter, basil and oregano and mix well.
Remove from heat and toss with cheese, parsley and the shrimp.
