Catch ‘em & Cook ‘em: Fried Bacon-Wrapped Oysters

1 C flour

1 tsp salt

1 tsp pepper

2 pints fresh oysters (about 46) rinsed and drained

23 bacon slices cut in half

Peanut Oil

How to:

1. Combine flour, salt and pepper in a shallow dish.

2. Dredge oysters in flour mixture.

3. Wrap each oyster with bacon piece and secure with wooden toothpick.

4. Pour peanut oil to a depth of 1 inch in a deep cast iron skillet or Dutch Oven and heat to 350 degrees.

5. Fry oysters, in batches, 2 to 3 minutes or until bacon is cooked.

6. Drain on paper towels and serve immediately.

Makes 6-8 main dish servings or 23 appetizer servings.
