Catch 'em & Cook 'em: Chicken Breast & Country Ham Supreme

2 Chicken Breasts divided

4 slices of Country Ham

1 C Heavy Cream

1/3 C Apple Cider

1 Tbsp fresh Lemon Juice

Salt & Papper to taste

4 slices buttered toast

How to:

1. Saute Chicken Breast in 1 Tbsp Butter over medium heat (6 8 minutes)

2. Add the Ham slices and do not over cook.

3. Add Cream and bring to a boil

4. Remove Ham and Chicken to platter.

5. Reduce the Cream by half and add Cider and simmer for 1 minute.

6. Whisk in 1 Tbsp Butter and Lemon Juice

7. Season with Salt and Pepper

8. Top each slice of toast with Ham and Chicken and divide sauce over each
