Catch 'em & Cook 'em: Baked Seafood Extravaganza

Ingredients:

12 small fish fillets

1/2 Lb bay scallops

1/2 Lb small shrimp peeled

4 Tbsp butter

3 Tbsp olive oil

1 small onion chopped

1 small zucchini unpeeled and chopped

1/2 C fresh mushrooms

1 1/2 tsp Old Bay Seasoning

1 3/4 C crushed Ritz Crackers

2 T butter melted

Salt and pepper to taste

How to:

1. In a large skillet at medium setting heat the oil and butter and add the onion, zucchini and mushrooms. Cook stirring often, until the vegetables are softened and lightly browned.

2. Add scallops, shrimp and seafood seasoning and cook, stirring until the seafood is just cooked through 3 to 4 minutes. Remove from heat

3. Add cracker crumbs and stir well. Season to taste with salt and pepper.

4. Preheat oven to 400 degrees. Brush a 9 x 13-inch baking dish with melted butter.

5. Cover bottom of dish with small fillets, seasoned with salt and pepper. Cover fillets with seafood stuffing and press the stuffing into an even layer. Top with the remaining fillets. Brush the fish with melted butter and bake for 15 to 20 minutes, until fish is cooked through and the stuffing is thoroughly heated.

6. With a spatula, remove each serving in the form of a hot "sandwich" with stuffing between fillets.
