Ingredients:
2 Lb. grouper, snook or snapper
2 onions thinly sliced
2 tomatoes sliced
1/2 C. black olives sliced
1/2 C. dry white wine
1 lemon sliced
1 lime sliced
1 orange sliced
How to:
1. Place fish in lightly oiled baking dish and layer with sliced vegetables and olives.
2. Pour wine over the top, cover and bake at 350 degrees for about 30-minutes (depending on thickness) or until fish flakes.
3. Use citrus slices as a bed for cooked fish on platter and place cooked vegetables on top of fish.
4. This is delicious served with fried plantains.
