Conch fritters with honey mustard sauce

7 oz. conch meat ground

2 oz. carrots

2 oz. green bell peppers

1 oz. red bell pepper

1 1/2 oz. celery

1 oz. white onion - chopped

1 tsp. minced jalapeno

2 tsp. baking powder

7 oz. flour

1 tsp. Tabasco

1/2 tsp. cayenne pepper

1 egg - beaten

How to:

1. Puree vegetables for one minute and remove to mixing bowl

2. Grind conch meat for one minute or purchase ground conch meat

3. Add meat to mixing bowl

4. Add egg, flour, baking powder and spices and fold gently

5. Scoop into wet hands and mold into small balls, about 1 1/2 inches around - about the size of a golf ball

6. Deep fry until golden brown

Honey Mustard Sauce

1 oz. honey

1 oz. Dijon mustard

1/2 oz. lime juice

2 oz. mayonnaise
